Creamy Cheesy Chicken Roll Ups

Cooking after college... it's not an option unless you want to continue living off of Ramen noodles and Eureka pizza. While I love both of these, 4 years is enough!
Pros: cooking after college is $CHEAP$. Uptown is not nice to your bank account and this is the best solution so far! Especially when you make something that makes you think DAYUM, I'm good! (Top Chef anyone?!?)

Creamy cheesy (yummy) chicken roll ups

I cannot even describe how good this is! It makes 8 roll ups and I ate 3 in one sitting the first time (fatask, I know) It's also an awesome left over for nights when you don't have time to look up pretty recipes on Pinterest that never turn out like the picture.

Total time: 30 min           (without cooked chicken):1 hour
  • 6 oz cooked chicken breast, chopped
  • 1 can crescent rolls
  • 1 can cream of chicken soup
  • 1/2 cup milk
  • 1/2 cup mixed shredded cheese

I baked my chicken before which only takes 25-30 min and very little prep time. Preheat oven to 350. Place a single chicken breast in a baking dish, drizzle Olive Oil on both sides. Salt and pepper to taste & whatever your favorite chicken spice is (mine is McCormick Grill Mates Montreal Chicken). Place in the oven uncovered for 30 minutes or until done.

When the chicken breast is close to done: mix together the milk, soup and cheese in a medium mixing bowl. Spray a 9x13 inch pan with olive oil spray (or pam or whatever you want to keep it from sticking). Separate the crescent rolls into 8 triangles on the cooking pan (I actually did 4 at a time so there was room to roll them up). Place a few pieces of chicken on the large end of the triangle and top it with a little of the soup mixture! Then rooooooooll those puppies up and continue until each roll has a little bit of chicken and a little bit of soup inside. There should be quite a lot of soup mixture left to poor all over the top of the chicken roll ups. Place in the oven (keep it on 350

30 minutes later...
