Chicken n Dumplins

When it is well below freezing outside there are very few things that can get my ass out of bed but these Chicken and Dumplings are one of em!! Like the dumplings from Cracker Barrel?!? Then you're gonna LOVE these!! 

Total time: 45 min.
Servings: 3-4
Ingredients 
2 chicken breasts (or precooked chicken)
2 quarts of chicken broth
2 cups all-purpose flour
1/2 tsp. baking powder
2 tbsp. butter (or more:)
1 cup of milk

1. Preheat oven to 375ยบ, place chicken breasts on a baking sheet and drizzle them with olive oil, salt, pepper and any additional seasoning you choose. Cook about 35 min or until done. 

2. While the chicken is cooking you can start on making the dumplings. Combine the flour and baking powder in medium bowl. Add butter and combine with the flour mixture by smooshing (not a word) the butter between your fingers. Pour the milk in next a little at a time until the mixture is dough like.

3. Clear a large space on the counter and dust a lot of flour either on a cutting board or on the counter itself. Place the dough on top of the flour and dust the top of the dough with flour as well. (this keeps it from sticking) Roll the dough with a rolling pin to a very thin layer. 

4. Dust the dough with even more flour and use either a knife or a pizza cutter to cut the dough into squares. 

5. In a large pot, bring the chicken broth up to a boil before you put all the ingredients in.

6. Now that your chicken is done, put it in a medium size bowl to shred it. The easiest way to do this is to use two forks to pull the chicken apart. It doesn't have to be pretty.



7. Add the shredded chicken to the boiling chicken broth. Place dumpling squares in the broth a couple at a time. Stir frequently so they don't stick to the bottom.

Tip: If you want a thicker broth, add a little flour to the broth as it cooks towards the end to thicken it up OR if you want it to be more soup like, add more broth. Neither can hurt:)
